Not exactly a blog, but management guru Charles Leadbeater has put his next book online and is asking for comments on each chapter before it is published.
Particularly apt as the book is about the collaboration culture.

Are you looking for current books being written or past books? Tom Evslin’s Hackoff.com is a great example of using a blog and podcast to write and promote a book.
Chris Anderson did most of his research via his blog for The Long Tail, though he has said that only about 5% of the blog content made it into the book.
There are a lot more that escape me at the moment. I’ll submit another comment when they come to mind.

I’m writing my book and blogging about it as well. I’m following the Naked Conversations model and putting sample chapters up as well.
